I couldn't find a three pound chicken at my market (only 5-7 lb) so I bought three pounds of bone-in, skin-on chicken breasts and threw them in the pot with black pepper, onion and broth/water (I didn't have enough broth--it was kind of a last minute decision). Turned it on low and let it cook for 8 hours then cut it off and let it sit for a few hours to cool. The meat FELL OFF THE BONE beautifully. Excellent way to prep chicken to have on hand in the freezer for any number of casseroles, soups or chicken salad.
