		<description><![CDATA[I made this for my family and it was a big hit! I did make a few changes. I didn&#039;t have canned chiles but I did have roasted Hatch chiles in my freezer so I used them. I doubled the meat, corn and sauce. To the sauce I added 1 tsp cumin and 2 tsp ground coriander. I also added a couple of sliced scallions and put them on top of the peppers. I didn&#039;t have a cornbread mix so I made my standard cornbread from scratch. It was delicious and my family informed me that I will be making it again soon. The next time I might add a can of black beans. to the chicken and corn. Thanks for a great recipe!]]></description>

This casserole is definitely delicious, comfort food. The pepper jack cheese sauce under the cornbread speckled with green chiles is amazing. Party on your taste buds. 

At first I was worried, because it seemed undercooked, (I could see liquid bubbling out from under the cornbread) but I realized after taking it out of the oven and letting it cool a touch, it was just the amazing sauce.]]></description>
