My family enjoyed it and claimed it was their favorite chicken divan that I have made over the 25 years that I have been preparing and serving variations on chicken divan. The measurements can be adjusted and ingredients substituted to lower fat and calories. I will definitely be making this again.

I made a couple changes. I didn’t make enough rice, but I had some Chinese fried rice left over–I added it. I didn’t feel I had enough chicken, so I added a can of chicken that I shredded up (I do my shredding in the food processor). I also added chow mein noodles to the top only because I needed to use them up. I enjoyed the flavor. I also used regular shredded and sliced cheese. I am not a Velveeta fan. But this was amazing, and I highly recommend it. My daughter even ate it and liked it, and she is one picky eater!
