		<description><![CDATA[Excellent and the leftovers are great too. My husband and son enjoyed this as well. It has all the ingredients we love in it. I used chicken breasts that I seasoned with Emeril&#039;s Essence, pepper and Rosemary Garlic Seasoning. I had my hubby grill them and I let them cool a bit , then cut into strips. Makes a big addition to the flavor in this, imo. I did use grape tomatoes (2 cups) and 12 ounces fresh mozzarella. I added fresh grated Parmesan and served it with garlic toast. Thank you for the recipe, great summer dinner! :)]]></description>
