		<description><![CDATA[I&#039;ve made this several times for my family and it is always a hit! I never have Cajun seasoning on hand, so I make my own: 2 tsp. thyme, 1 1/2 tsp. kosher salt, 1 tsp. granulated garlic, 1 tsp. granulated onion, 1 tsp. paprika, 1 tsp. light brown sugar, 3/4 tsp. fresh ground black pepper and 1/4 tsp. ground cayenne pepper. Also, I let the brown sugar and Cajun rub soak into the roast for 15 minutes before browning. I make gravy just like the first reviewer did, but I use 2 Tbl. of flour instead of cornstarch. This is such a great recipe!!]]></description>

Husband was worried about the brown sugar but I wanted LOTS of flavor so I doubled the cajun seasoning to 2 teaspoons and did 3 tablespoons of brown sugar.  I then added the carrots and potatoes like Kristy suggested and even threw in some onions.  Like someone else said, it did take a little longer to cook on higher temp (315 for an hour and then 350 for an extra 20 minutes) but OMG the flavor was amazing.  I definately recommend adding some veggies and potatoes in with the roast because it is a SIN not to have something soak up that DELICIOUS juice!]]></description>
