I substituted the cranberry juice with water and a small handful of Craisins! The beef was nicely tender, with a good flavor. The recipe itself has plenty of wiggle room – meaning, you could add more liquid/water, use a different broth in exchange for the consumme’, etc., and the flavors are still there. Very good!
