These enchiladas are so filling, even for a vegetarian dish. They are super easy to make, and the enchilada sauce is definitely what makes the recipe. It’s not spicy, but so flavorful. I’m going to use this sauce with other recipes as well! I doubled the recipe and used corn tortillas instead of flour, and it made about three dozen. Thanks for sharing this great recipe!
