Next time I make this I will probably tweak a few things. I probably won’t use half a package of bacon, even my bacon loving boyfriend said it was a bit much. I will (try) not to burn the bacon and I will not leave all the bacon drippings in the pan because after it baked I had to drain off grease that had built up in the corners of the baking pan…yuck. Instead of the parmesan I added pepper jack cheese, and next time I will probably add more than 1/3 of a cup because we really couldn’t taste it and I think it would be delicious with a bit of a bite!

What a hit! Nice, smoky flavor and the crispy bacon pieces are a nice contrast to the creamy mac and cheese. Next time I might try smoked gouda in place of the parmesean to add to the smokiness of this dish.
