I have been making this one over and over since I first tried it out, and everyone LOVES it. It’s great for casual get-togethers or potlucks because it’s simple and inexpensive. Who doesn’t love a one-pot meal? Just make sure to simmer uncovered to prevent the issue I had the first time around, and it’s a winner.

“I tried this recipe, and my husband absolutely loved it. I added a teaspoon of curry powder, and I think it kicked up the flavor even more. My one criticism is that I ended up with too much liquid – almost a stew consistency. I will cut the amount of broth I add by about a cup next time. That said, I probably will be making this a lot in the future because it has great flavor.”
