Wanna Be...........You can buy apple pie filling with cinnamon? I looked at my Publix and couldn't find it.
I would say it doesn't need any additional cinnamon then. One person said that the meat was bland------I put seasoned salt on my pc, and as always, salt makes everything better. She may want to try that. When I'm not in a hurry, I also brown mine in butter. But the quickness of getting the dish in the oven is what makes the dish as you wrote it so appealing.

Oh Beck, thank you so much for your review! Those modifications you made sounds wonderful - I'm a huge fan of cabbage and onions, so big thumbs up from me!!
I'm glad it wasn't a boring meal for you, the hubs and your daughter.
I look forward to giving some of your recipes a shot as well. And I stopped by your blog, wow those quilts are stunning! Quilting is something I've always wanted to try. I'll keep reading your blog and picking up as many tips and tricks as I can :) All the best ~Megan

I just gave this 4 stars and that's because it was a big hit with the hubs and even with the daughter who doesn't like cooked apples. For me, the pork lost a touch of flavor in the cooking.

First, my "modifications". I didn't (and never do) have apple pie filling so I melted a couple tablespoons of butter in a sauce pan, then added diced white onion and sauteed it up for about 5 min. over med., med./high heat. I peeled, cored, and cubed (small) about 4 small apples then dropped them in the sauce pan. I added 1 cup unsweetened applesauce. I stirred it all together, covered and cooked on medium for about 10 more minutes. Was sure to stir periodically. This became my "apple pie filling" for the recipe.

I should have, but didn't, brown the pork chops before cooking. I think a quick flash fry on each side in butter (yes, butter) would have done a lot for keeping the chops moist and flavorful.

That said, the overall dish was very good and a larger hit than we all thought. We were fearful it would be boring, especially b/c I served it with sauteed cabbage and onions. I served an additional side of cranberry sauce just because I was afraid the pork and apples would need the tart flavor. I have to tell you, I was WRONG. The stuffing over the apples and the pork really work together.

Any future modifications I might make would only be to use an herb instead of a cornbread stuffing.

I'm really glad to have someone comment on this recipe! I'm glad this is such a favorite of yours as well. I use the canned apple pie filling that already has some cinnamon in it. But I think you're right, there's always room for a little more ;)
All the best ~ Megan

This is a great recipe that I have made for years. It is the first meal I think of when I need to take food to a family. My recipe calls for sprinkling cinnamon in the apples. Thought you may want to try that if you haven't already.
Just a variation...........
