		<description><![CDATA[Glad you all enjoyed it.  I believe alum has preservative qualities (helps keep pickles crisp) and it also has antibacterial properties. You would probably want to keep the alum in the recipe for this reason--to inhibit bacteria. The salt also acts as an anti-bacterial.]]></description>
