		<description><![CDATA[I&#039;ll be the first to admit that I am NOT a mayo fan, but I wanted a healthier option for mayo when I started making homemade ranch dressing for my kids.  I liked that this recipe uses olive oil but was still unsure - I mean it has balsamic vinegar and mustard... those are very strong tasting additions!  But I tried it and I have been very happy with the results!  It does not have an overpowering balsamic/mustard flavor like I expected.  The emulsion worked great with my immersion blender (it was a little runny at first but firmed up nicely in the fridge) and my kids (ages 2 and 4) love the ranch dressing made with it.  Give it a try - it&#039;s worth it!]]></description>
