Do you think this would work with roasting a chicken and making gravy for the chicken?

I wish I had seen this before thanksgiving! I’ll have to find a reason to prepare another turkey soon because we’re having ham for Christmas.
I’m guessing if you use the bacon fat while still hot, it might cook the skin when you brush it on and the skin would, in the end, be over cooked???
