The candy corn in the middle really does create kind of nougat-y center that makes these cookies a lot of fun. Just make sure you heed the warning to completely cover the candy corn with the cookie dough.

The next time I make these, I think I will omit the peanuts and substitute crunchy peanut butter instead.
