Description
Refreshing, light and healthy, this Cucumber & Mint Cooler is the perfect mocktail to relax on a warm day. Fresh, sweet cucumber and mint is offset with tangy lemon, mixed with soda water.
Ingredients
- 50 grams Cucumber, Sliced, Plus An Additional Few Slices For Garnish
- 5 leaves Mint, Plus Extra For Garnish
- 2 Tablespoons Lemon Juice, Freshly Squeezed
- 1 teaspoon Powdered Sugar
- Ice, As Needed
- 200 milliliters Soda Water Or Club Soda
Preparation
Combine cucumber, mint, lemon juice and sweetener. Blend using a stick or immersion blender.
Fill a glass half full with ice cubes. Pour over the cucumber mix.
Top the glass with soda water and swirl to combine using a cocktail mixer (or just a straw). Delicious!
