		<description><![CDATA[I had a Red Velvet cake mix in the cupboard so thought I&#039;d give this a try.  I ended up making cupcakes so piped some of the frosting into the middle of each before I frosted them.

I did use almond extract instead of vanilla.

I took leftovers to work and got several, those were delicious comments.   I think this frosting is a good alternative if you are looking for cream cheese flavor with a lighter, fluffier texture.]]></description>

		<description><![CDATA[I should start out my review by saying that I am pretty picky when it comes to frosting.  I grew up eating homemade frostings and can&#039;t stand any sort of boughten frosting out of a can (shudder) or anything like that. 

I thought this frosting was WONDERFUL!  It was great - not overly sweet, and had a good consistency and texture (even a day later, store in the fridge of course). 

I used it to frost PW&#039;s Strawberry Shortcake Cake for my sister&#039;s bridal shower this weekend.  Months ago when I made the strawberry shortcake cake the first time I like the cake a lot, but the frosting was much, much too sweet for my tastes.  When I saw this recipe on TK I thought it might end up being just the right amount of sweetness and richness and it was! 

This recipe makes plenty to frost a 9 in double-layer cake, I think.  I didn&#039;t try any fancy decorating, but the frosting was pretty just the way it was.

Thanks for a GREAT recipe that I was definitely be making again.  I think I like it better than any other frosting recipe I&#039;ve ever tried!  :)]]></description>
