These cupcakes were FANTASTIC: moist, sweet, dense, and heavenly! Everyone I served them to loved them!
In addition to the cherry juice flavored whipped cream with cherries on top, I also made a strawberry juice flavored whipped cream and put strawberries on top of those cupcakes. Both ways worked great!

They tasted just like Pastel de Tres Leches. The cupcakes were super light and airy. My two year old daughter stole two while I was letting them cool and was trying to go for a thrid ;-)

I had a little bit of a problem with the wax paper and think it was easier to soak the cupcakes with muffin cups but other than that the recipe was really easy to follow.

I toasted coconut and added that to the top of my cupcakes in addition to the cherries.
