I was looking for something like this for a long time, because of how dedicated I am to staying purely vegan. I loved how puffy and crunchy they are when finished, compared to other popular vegan cookie recepies out there. When cookies are very moist and dont even feel like cookies. I mean cookies must be crunchy, thats the whole point of it, right?
