I omitted the coffee, but when I baked the cupcakes, the centers sunk. I don’t know if it was just the weather that day or what, but I had to end up scrapping this recipe and going with a backup.

The ganache is a really nice and decadent touch, too. Although, I’m going to use a little bit less of the instant coffee the next time around. Don’t get me wrong, I’m a huge coffee lover and believe that coffee intensifies the chocolate. However, the ganache had a bit more coffee flavor than I liked. Overall, marvelous!!

You will never use a box mix again! It is amazing.
