Hi startedwithcookies! I made them with the first 3 ingredients, which I liked a LOT, but I found adding just the bit of vanilla and baking soda took it up just a notch. I ususally just drizzle a bit of white chocolate on top, just to make them pretty I agree, make them small because they are potent! I never thought of almond butter, that sounds great! I will have to try it that way next time!

i've seen this recipe before with just the first three ingredients, and i love it because it's easy to remember (one cup, one cup, one egg) and because you probably already have the ingredients in the house. plus, it's so easy!
i also tried making them with them with chocolate chips, which i felt like took away from the "purity" of these cookies, but others really liked them that way.
then, i made them with raw almond butter for my christmas cookie boxes this year, and they were a hit! elegant and unexpected.
i made a second batch with the almond butter and tried adding almond extract, but wasn't that excited about those; i didn't think to try vanilla.
my only note would be that i like to make these small because the peanut butter flavor is delightfully potent; so a bite at a time suffices.
