Hi Clueless-- have to say that sounds kind of funny! Anyway the whole process is the cook time so from start to finish it should take you 30-40 minutes. I put my gas burner on med-high and cooked the sugar until the temp on the candy thermometer read Hard Ball... My candy thermometer actually spells it out for me in case i can't read the little lines! Ha! once it hits Hard Ball remove it from the heat add the egg whites and beat away. Wear an apron! I kind of got sugar on my sweat shirt from the flying sugar! hope this helps!

When the recipe says beat the egg whites, do you mean just beat them a little bit or beat until frothy?

This sounds deliciously delightful to my tastebuds, but I'm not sure what the cooking time refers to. I'm a newbie in the kitchen, so if you could just clarify what I'm cooking for 40 minutes and at what temperature, it would be greatly appreciated! Thanks so much, and I'm sorry for my cluelessness - lol!
