Description

These strawberry cupcakes really hit the spot when you want something sweet and sinful like cheesecake but don’t have the time to wait! Really moist. Really good.

Ingredients

  • 1 box (18.25 Oz. Box) Strawberry Cake Mix
  • 1 package (3.4 Oz. Box) Instant Cheesecake Pudding Mix
  • 2 cups Sour Cream
  • 3 whole Eggs (large)
  • ⅓ cups Vegetable Oil
  • ½ cups Water

Preparation

Preheat oven to 350 degrees F then line two 12-count cupcake pans with paper liners.

Beat all ingredients together until well blended. Note that the batter will be very thick and glossy (that’s the pudding!). Fill cupcake liners 2/3 of the way to the top and bake for 14-16 minutes. Let cupcakes cool completely then frost with your favorite icing (I used vanilla buttercream—yum!).

I just so happen to have all of the ingredients to make these, except the cake mix. Looks like I’ll be making a trip to the store so I can make these!

These were the most moist cupcakes I’ve ever had! So, so delicious, and so easy! Frosted with cream cheese frosting. Yum!

These were oh so good… my girls especially liked them! I used the Marshmallow Cream Cheese Frosting recipe by Twinks to top them off. Yummy!

Just tried these and they were a HUGE hit. They taste wonderful and are so easy to make. (I used creamcheese frosting since that is what I had on hand).

Oh and definitely only fill the muffins 2/3 like the recipe says…. I got a little over-zealous and put too much in and they puffed over the sides. LOL! We still ate them but they weren’t as pretty as the others. :-)
