Hey ambj73. There are plenty of things that can make a recipe go awry, trust me it happens to me daily! Perhaps one of the dry ingredients was to densely packed down and that threw the quantities off. Maybe the butter needs to be left to soften a bit more next time. Hopefully that helps and it works out!

Oh no, I must have messed up because mine didn’t turn out at all. ={ I’m assuming it is me, since there were so many positive reviews and comments. I rechecked all my quantities, no problem there. I used a hand mixer, maybe that wasn’t a good idea? The dough was too crumbly and never really formed. I finally was able to roll out between sheets of wax paper (didn’t have parchment paper), but then the cookies themselves sometimes broke while trying to spread the jam and just seemed dry when eating too. I was so excited too! This is my first foray into shortbread…maybe I should keep trying?

These were fantastic! I used raspberry jam and would definitely do that again. I made them for a shower and one guest even thought that they were from a bakery. Great recipe!

I made these yesterday. They are the most delicious, melt-in-your mouth shortbread I have ever made. I used triple berry jam in the middle. I used a cute scalloped 2″ square cutter.

These are SO GOOD! I only had round cookie cutters too, but that didn’t matter. I love shortbread more than anything. I filled them with black raspberry jam, our family’s favorite. This was a very easy recipe, got lots of cookies out of it. I’ve eaten so many already!

These are delicious! I used cookie cutters that were 2″ at the biggest point and I got 90 cookies, so 45 sandwiches! And I had more dough left but was sick of rolling and cutting…definitely could have gotten 10 more for a total of 50 sandwiches. Easy recipe, dough wasn’t sticky at all and they are yummy!
