First, the dark brown sugar is really important, it keeps everything sticking together better. Second, if you let the butter heat up just a little (I put it on the oven while it preheats) it’s easier to cut in to crumbles. If you start to use your hands to make “crumbles” everything breaks apart. But, when it’s taking forever to cut with two knives, using your hands is really tempting. I’ve definitely make that mistake before!

I’m not sure what happened, but the “crisp” was not crispy. Even before I baked it, the topping was not “crumbly,” but kind of runny. I realized after I made it that I had used light brown sugar instead of dark brown sugar–not sure if that made a difference. But it sure did smell good when it was baking in the oven and it looked very tasty. I plan on trying this recipe again with the dark brown sugar; hopefully I will have better luck the 2nd time around!
