		<description><![CDATA[I read that you can &#039;make&#039; dutch processed cocoa, by starting with Hershey&#039;s cocoa and adding a pinch of baking soda to every 3 Tablespoons of cocoa.  

I made these cookies last night (with the modified Hershey&#039;s cocoa) and the taste was wonderful.  I&#039;ll have to try the &#039;real&#039; dutch processed cocoa in this recipe to see what the difference is.]]></description>

		<description><![CDATA[If you look at the ingredients in your cocoa powder and there are other ingredients besides cocoa then it is probably dutch processed cocoa powder. I think it was Fine Cooking that said the cocoa beans were washed in a potassium rinse to rid of the acidity. But with these cookies I think it would be okay to use natural but it wouldn&#039;t be the exact same results in texture. 

And I just used instant coffee so that I could use more coffee flavour with less liquid. I&#039;m sure you could use a couple teaspoons of espresso or really strong coffee in its place. 

Oh and as for fleur de sel, regular sea salt or even a bit of kosher salt would be great. I had a hard time finding fleur de sel and when I did it was in a food specialty store.]]></description>
