These are *great*! I'm going to try them in other Jello flavors, too. I think for a party, I'd do several flavors, since they are so brightly colored and pretty--how about lemon, raspberry, and tangerine?! My husband especially loved the soft, marshmallow-like texture. I did chill the dough overnight, used an ejecting cookie scoop, and scattered a bit of flour on the counter to pat my hands in as I rolled them, since the soft dough is a bit sticky. Still, it didn't take all that long to make them and very worth it. A new favorite!

Highly flavorful, bright, fun cookie with a soft, slightly chewy texture. These are excellent and unusual. My neighbors and I couldn't stop eating them. Recommendations: The dough is very soft and may need chilling longer than stated in the instructions. It does not get "firm", but it is easier to work with when it is chilled. Dust cookies with powdered sugar after baking. All of the powdered sugar on the cookies that I made dissolved into the cookie when baked. No problem, just dusted them again after they cooled.
