		<description><![CDATA[One thing I miss dreadfully in the UK is Chocolate Chip Cookies, so I searched out a trusty PW recipe and put it to the test. I chose to change from the recommended amount of chips to 1 cup dark chocolate cooking chips (which are really spots) because there isn&#039;t semisweet chocolate in the UK. I also omitted the flax seed since I couldn&#039;t find it, but kept in the coffee, though I don&#039;t usually enjoy coffee or its flavor. The recipe made just over 4 dozen cookies.

They were wonderfully soft, and even the chipless ones at the end held their shape beautifully. This is an easy recipe to follow and make even if you are lacking in traditional kitchen supplies. My UK friend&#039;s loved the softness of the cookies and the slight hint of coffee. I will definitely fix these again!]]></description>
