I changed the filling amounts to 1 cup peanut butter, 2 tsp vanilla, 2-1/2 to 3 cups icing sugar and enough milk or cream to make a squashable filling. I used a small scoop to make the cookies and used that same scoop to measure out the filling. Top with another cookie and press together. They were a HUGE hit at work today.

These are awesome! The cookie turned out perfect and the filling pushed it over the top. My husband loves these too. I can only eat one because they are so sweet but is it two? My dad loves peanut butter. I mean he LOVES it. He puts peanut butter on every other cookie he has. So I tried to find a good peanut butter cookie recipe for him. This is PERFECT!! I made them for him this afternoon and he thought they were awesome!! I thought they were so easy to make and they turned out perfect. I got about 40-45 cookies, so it made about 20-22 sandwhich cookies. I also thought they were delicious and am planning on making them all the time. So thankyou for sharing a winner!!
