There are a lot of good chocolates out there, but the one I'm most fond of is Peter's chocolate. I believe it's a Nestle product. The candy store I worked at is in Boise Idaho, and the owner has his chocolate shipped from Wisconsin or one of the states in that general area. I've seen Peter's chocolate available from King Arthur flour also. Unfortunately they usually don't carry the milk chocolate, which is my favorite, even though I love semi-sweet also. Fortunately for me, I am able to purchase the chocolate in bulk from the store I worked at. I even splurged and bought a small chocolate temperer about 10 years ago, and use it every year to make chocolates for Christmas. So, now you see why I've been so interested in your yummy fillings! Keep up the good work!

Yum! These sound delicious. They're so pretty, that I can tell you've dipped a lot of candy in your day. I've noticed a lot of your recipes, and I'm wondering if you would be interested in using 'good' chocolate? I used to work at a candy store that made their own fine chocolates, and once you've had the real thing, a person can never use the candy coating ever again. Your centers sound so yummy, that they deserve good chocolate!
