As it turns out, her birthday was coming up and we have a tradition of bringing in delectable goodies to celebrate work birthdays. So I had to make it, of course. It is, in a word, scrumptious! The only deviation I made was to use real whipped cream instead of Cool Whip. The top was a little runny and there was a small amount of sloshing during the drive to work, but no irreparable damage and no effect on the taste. I think next time I might reserve less of the pre-PB mixture to mix with whipped cream. Anyway, my co-worker loved the pie, as did everyone else who got to try it (including my boyfriend, for whom I saved a piece). Thanks for sharing!
