These bars are so fantastic I almost can't stand it. Everyone that has tried them can't get over how wonderful they are. I have to admit that I made a mistake while putting them together. My pastry blender is a piece of c**p, so I cut in the butter in the food processor. I noticed that it seemed a little dry and sandy, but was able to press half in the bottom of the pan without any problems. I finished with the peach filling, and crumbled the rest on top. I was just getting ready to slip it in the oven when I noticed one stick of butter still laying on the counter! I had only used one stick for the crust! I freaked out a little bit, and just decided to cut it into small chunks and laid them on top of the bars and then baked them. It took about 55 minutes to get a nice brown in my convection oven. We let it cool off a tiny bit, and I dished some out while still warm and glory hallelujah, it was fabulous! It is just heavenly. My husband put a little vanilla ice cream on his and declared it "one of the best desserts of all time". I told him how I had screwed them up, and he said, "you either screwed them up or made them better." Anyway, they were excellent either because of or in spite of my mistake. I really do plan to make them the correct way next time, and there is no doubt there WILL be a next time! Thanks for the awesome recipe, it's a keeper for sure.
