I love to bake cupcakes, but since it’s just me and hubby a whole batch is just too much. This recipe is perfect for us. Plus they taste wonderful. And are a great way to use up any leftover frosting I have from making bigger batches of cupcakes. And since they are so quick and easy to put together, they make a great last minute dessert (just pop them in the fridge to cool quicker, I just top with a little powdered sugar sifted over them if you don’t have frosting handy).

As a beginning baker, this recipe is simple enough to make and delicious enough to make again (and again…) I have made these cupcakes for family and friends and everyone loves them. I always share the recipe and the link to your blog. Great stuff!

It’s probably a good thing this recipe only makes two, because I would have given into my piggy side and eaten as many as I baked! Delicious cupcakes, and I loved that they were one bowl. I loved being able to make a batch of cupcakes in under 5 minutes. Thank you for the great recipe!!

These were yummy, and SO moist! The only issue that I had was that I doubled the recipe, and in trying to keep perfectly with your recipe, I measured two heaping 1/4 teaspoons of baking powder, and the baking powder flavor came through a little strong. But with rich enough frosting, I could hardly tell! I will definitely use this recipe all the time now, I didn’t even have to use my stand mixer, and it kept my husband and I from gorging ourselves!
