These just came out of the oven – SOO good! Crispy on the outside, chewy on the inside. The combination of oatmeal and butterscotch is delicious. I can’t wait to see what everyone else thinks on Christmas

Alrighty, I don’t usually jump to bake with butter and I didn’t have shortening in the house. After several past cookie batches made with “good for you” ingredients that were blagghhh, I decided to go for it.

Bought Guittard butterscotch chips…nice mellow butterscotch flavor. I bought shortening made from palm and sunflower oil and went for it…big time.

LOVE these damn cookies. I put half the dough into the freezer for next month.

Soooo good! Such an easy recipe with delicious results. I had to leave the cookies in for about 12 minutes, but other than that, followed the recipe exact as it’s written. Thanks for posting!
