I initially wasn't going to make this cake once I saw that it contained 3/4 cup of oil. Than I reminded myself that I regularly add that or more butter to baked goods without batting an eyelash. So, I went for it. What I loved about this cake was how easy it was to make with my 4 year old. There are no raw eggs to worry about her handling or ingesting. It's alsovery moist cake, that the frosting compliments nicely. The flavor was good, but it wasn't the rich chocolate flavor that I was craving. My only other complaint is that for me the 35 minute recommended cook time was too much. I took it out (thankfully) at around 32 minutes and it was already getting a little too brown around the edges.
