You’re right, those 2 hours were torture, but licking the beaters all by my self did offer some comfort.

The cookies were delicious! They’re still lovely and chewy a day later, but they’re disappearing fast. A cookie with a scoop of maple pecan ice cream on top made for a delicious dessert last night. I will make these again and again.

After chilling the dough, I formed the balls and rolled them in sugar, then stored them in the fridge to start baking the next day. (I would imagine that the dough would freeze well, but I haven’t tried that yet.) I like my molasses cookies to be chewy, so I used parchment paper to make sure that they didn’t overcook on the bottom. Thanks to Mark’s Grandma!
