They were surprisingly easy and won “favorite” and “most creative” cupcake of the night. I ended up substituting the filling with a mixture of key lime juice, cream cheese and sweetened condensed milk because I didn’t have the other ingredients on hand. The entire result was wonderful. The coconut flavor with the lime filling was amazing. The icing was my favorite though by far. It was heavenly! I will be making these again and using the icing far more often then just for these cupcakes.
