		<description><![CDATA[Farmer&#039;s cheese is quite sturdy and dry, it is usually sold in rectangular stick-like packages (at least &quot;Friendship&quot; brand is) and has a consistency that is very similar to ricotta, just farmer&#039;s cheese is much firmer and drier than ricotta; for these cookies I would not recommend substituting farmer&#039;s cheese with cottage cheese; the only possible substitution might be ricotta, but I&#039;ve never tried it myself.]]></description>
