The combination of the sweet shortbread crust and the lemon curd is wonderful. I made them in a mini muffin pan for bite sized treats and then topped with one raspberry. I’ve never made lemon curd before and it was very easy. I’ve got quite a bit leftover and I’m looking forward to putting it on other things.
