I made this recipe tonight and was super excited because key lime pie is my all time favorite dessert, and I love making cupcakes, so this was a perfect combination of the two! I added a little extra lime juice to the curd to make it a little more tart, and it still came out delicious! I did not, however, use the same recipe for the frosting. I like using frostings that can sit out on the counter and not spoil, so using raw egg whites and butter did not appeal to me. Instead I used shortening, confectioner's sugar, clear vanilla extract, and a little lime juice. It was a good smooth flavor that helped balance out the strong flavors in the rest of the cupcake. Thanks for posting this recipe! I will definitely be using it again many times in the future.
