These were cookies that my Mom made every Christmas. I was nostalgic and wanted to make them this year. They were so easy to make and made 48 cookies in each batch. I did one batch with lime and one with cherry jello. I actually like the raspberry better than the cherry but then there weren't many left of either flavor so I would consider them a hit. There are a few real tricks to these cookies: 1. line your pan with parchment 2. use a small scoop for the 1" roll of dough for a consistent size and 3. use the bottom of a wine glass, dipped in sugar to press out the cookies. They turn out wonderfully crisp and light. Just be careful... you'll end up eating 6 at each sitting! Thank you so much for the recipe.
