THIS is the recipe I’ve used for some time. Some cooks will say “that’s cheating”, but I’m telling you…it is so good! My family turned noses up a bit at first, until after the first bite..and a slight smile. The second bite and they are all over for the recipe!

This can be quite rich, so often I will bake my crust in a tart pan (removable bottom, 12″), add the filling and broil as above. It i so good and the perfect ration of crust to filling, not too sweet!

I made a couple of these for a bake sale, and the pies sold within the first hour and a half. I then made one for just my family, and it was gone within two days. Absolutely delicious! Nicely rich and creamy and absolutely so simple to make. Thanks for a wonderful recipe!
