This was yummy but needed a grapefruit juice/powdered sugar icing my family thought that or some whipped cream.

this cake shouts “Spring” to me. It’s light and more like a sponge cake in texture. I’m not sure why but I had a tough time identifying this specifically as “grapefruit” so maybe next time (and there will be a next time) I would bump up the amount of zest. I think it would be sensational with ANY citrus. The honey drizzle w/a bit of whipped cream is a perfect topper.

I think that could totally work. The beautiful thing about this cake is that it’s not very sweet, it’s fresh and citrus-y. Try it with the wheat pastry flour and honey, although I’m not really sure how much honey to use, and let me know how it goes! If it’s not sweet enough, just drizzle honey on top of each individual serving.

This looks so good! But I gave up sugar and white flour. Do you think it would work with whole wheat pastry flour and honey?
