I was a little worried at first because when 30 minutes was up, it was a big sloshing puddle in the middle still. So I had to bake mine an extra 10 minutes and by that time the top was nice and toasty. It turned out great! Thanks so much for sharing!

The bottom was kind of mushy. However, it was still pretty good, especially when it cooled down. Coconut and I get along well.

I had sent the recipe to my SIL who then shared it with her friend who ended up making two for a party she had. Everyone at the party loved it! Then we made one for dinner and we didn’t even let it cool. It tasted so good, warm or cold. And it couldn’t have been easier to make. Very good and much easier than pie!
