I use gluten free flour instead of regular flour and they turn out great. I am always surprised at how watery the dough is but it all works out. Be careful not to over bake -take them out before the tops begin to crack -or they will become very hard.

I got 18 cookies out of the batch, but half were destroyed into mounds…but still tasted great.
