Trish in MO (I know your comment is a year old but . . .) - I'm allergic to peanut butter so I substitute almond butter for recipes with PB. Changes the flavor a bit but still tastes great. If you can handle the almond butter, give it a shot. I buy a fresh ground version at the health food store that has nothing it but basically the almonds. Very good! (Great for sandwiches too!)

Have you ever tried substituting the butter with something like Smart Balance? I wouldn't normally for this kind of thing, but I need some cookies and just realized I only have about a tbs. of butter in the fridge! We'll see how this goes...

I had a hard time getting these to come together, they were just so runny. Maybe it was my jam, I don't know. I ended up adding another 3/4 cup of oats to get mounds to form. The cookies tasted alright, but not great, which was a disappointment since they smelled amazing while on the stove.

Darthval -- Stevia comes in various forms (liquid, bulk, and packets). For a conversion chart, check out:
http://www.cookingwithstevia.com/web/chart.shtml. I have only recently started using Stevia so I'm not sure how accurate the chart on the above webpage is. If you make it with Stevia, please let us know how much you used and how it turned out. Thanks!

These look wonderful but I prefer to use Stevia to artificially sweeten things. Does anyone have any idea if I should use about the same amount of Stevia as Splenda? I think Stevia might be a little more intensely sweet but I'm not sure.

Trish - You know I love a challenge. You could make it over-the-top chocolatety and use Nutella instead of the peanut butter. The peanut butter is certainly not required (without any other substitutions) and the cookies would turn out just fine. You could add some chopped nuts to give it some crunch. You could throw in some coconut (unless coconut grosses you out). You might try some caramel in it. Geez. I'm making myself hungry. The recipe is very forgiving so change it up and let me know how it turns out.

First, I have to say I'm enjoying your recipes! I was all for these until I got to the peanut butter part; I have an aversion to peanut butter baked in desserts. (I know...I'm weird like that) Any substitution ideas?
