Although these brownies taste good, I had frustrations with the way they turned out. I used a half baking sheet and felt it was too big. Could barely get the brownies to fit the whole pan. Then it cooked uneven leaving one side too thin and overcooked. I also felt the frosting amount was not enough for this size pan. I would have double it but not used all of it. Next time I will use a smaller pan. Maybe a 1/4 baking pan? anyone else have this problem???

Calli, your ganache is so smooth, it looks poured on. Mine was just a little too thick to pour and when I used my spatula, I could not get it smooth. It pulled up the mint layer in a few areas and got cold quick in others...what did I do wrong? I still love this recipe!

I made a half sheet pan to take to my son's school for St. Patricks day. They were a huge with with the teachers and the students. The directions were very clear and simple to follow. Thank you for sharing this wonderful recipe!

I made these for Thanksgiving dinner and they were a big hit! My granddaughter nicknamed them the Andes Mint brownie. My husband thought the chocolate was a little too thick, so next time I will just make 2/3 of the recipe. I will be making them to take again this week. Definitely in my recipe box!

These are so fabulous! They look very fancy and complicated, but were pretty easy. Just allow plenty of time for cooling each layer. I took them to teacher luncheon at my school and there were a huge hit. Very decadent and delicious, just as a brownie should be.

Although these were good, there were a few things I'd adjust. First, freezing for just a few minutes before applying the mint frosting meant that the brownies were still a little warm -- so the frosting melted, wouldn't spread evenly, and partially soaked into the brownies. Freezing for a longer time before applying the frosting should fix this. Also, there didn't seem to be enough frosting, although this could be due to having some of it soak into the brownies. There actually seemed to be too much ganache, and it didn't stick to the frosting when the brownies were cut -- so the layer of ganache was coming off like a shelf. A colder, smoother layer of frosting might fix that, too, but I think next time I'll cut the ganache measurements by 1/3. All the flavors were great, though.
