This is MY recipe : ) Our oven was out, I needed to take a dessert to a gathering and was short on time, and I walked around the store thinking, "What is something really easy that doesn't require baking that I can tonight as a dessert?"

I saw the Ritz Crackers and remembered my mom making chocolate covered Ritz when I was a child. Then I saw the Andes Mints and thought, "AHA! Thin Mints made ez!"

My son thought I was crazy. Then I saw the endcap item which was "Special Ritz Cookies"......Ritz own premade chocolate Ritz cookies....only a lot more expensive! I sad, "See! I'm NOT crazy!"

They were easy.....they were a hit......and they're a standby now when we need a quick and ez dessert.

Great recipe!
