My husband and I both loved this recipe. I was in a bit of a rush to make it and only barely ripe bananas so I added just a bit of banana extract to the vanilla pudding. Oh ma gah! If you like bananas you will love this pudding. I made it only a few hours in advance so the Nilla Wafers were still crispy and it was very good. It was very, very good the next day when the Wafers had softened and the banana flavor had deepened. It was just as good on the third day too. The addition of sour cream to the pudding adds a silkiness and cuts some of the sweetness. Don't get me wrong, it is plenty sweet, but in the right, delicate way.
Great recipe, CamRose. Thank you.
