The recipe is excellent. The cookies came out very moist. These are more like little round cakes than cookies. This would make a great whoopie pie recipe. Perhaps subbing chocolate for the coffee flavor. I’m giving the cookies a four because…I didn’t super duper love them. I think that’s just me because the recipe works perfectly and bakes beautifully.

The penuche frosting is definitely a 5 star. It’s fantastic. Wonderful caramel flavor. It would be great on any cupcake or drizzled over a bundt cake.

I got to wondering about penuche too, I remember seeing it in my mom’s cookbooks. A quick google suggests that it is brown sugar fudge, which is just like the icing. I need to try these.
