I was very popoular with my husband after making this delicious pie. The Cream of Coconut is the secret in my opinion – provides such a wonderful coconut flavor in addition to the shredded coconut you add. I also added a few drizzles of the Cream of Coconut to the whipping cream before beating to provide a hint of flavor as well. Easy to make and well worth it.

I made a scratch pie crust as well. Definitely will make again.

This looks great. But what do you do with the last 1/2 cup of shredded coconut? Sprinkle on top I assume?

It’s rich but really good. That’s why it doesn’t have much sugar in it.

Luv coconut cream pie. Have never made one with Coco Lopez……. would make a very rich pie I think!
